These cookies are some of the best I've ever had!! Not only are they amazingly delicious, but they also have some very healthy components! :)
Ingredients:
2 1/4 C quick oats
2 T cornstarch
1/4 tsp salt
1 tsp baking soda
3/4 C earth balance margarine, very softened
1/2 C cane juice crystals (sugar)
1 C unbleached flour (can use some wheat flour)
1 T flaxmeal
1/4 C maple syrup
1 tsp vanilla
1/2 C chopped nuts, pecans or walnuts
1 C apricots, finely diced
Instructions:
Heat the oven to 350. And line your cookies sheets with silicone mats or parchment paper.
