Carrot Cake Muffins

1 1/4 C whole wheat flour* 1 C unbleached flour 2/3 C cane sugar 3 tsp baking powder 3 tsp cinnamon  1/2 tsp nutmeg 1 tsp salt 1/2 C unsweetened applesauce 1 C soymilk or almond milk 2 tsp vanilla 1/2 C canola or coconut oil 2 C grated carrots 1 C raisins 1/2 C walnuts, chopped Preheat the oven to 350 degrees. In a large bowl, whisk together all dry ingredients. You can even put in the raisins and walnuts at this point. In a separate bowl, whish together the wet ingredients. Fold in the carrots and stir until combined. Spray muffins tins with cooking spray and spoon batter into muffin tins. Bake for about 20 minutes for regular size muffins (17-18 minutes for mini muffins), or until a toothpick comes out clean.  *May substitute 2 Tbsp flaxmeal for part of the whole wheat flour. These muffins are also incredible as carrot cake cupcakes topped with cream cheese frosting! 

Vegan Gluten Free Banana Blueberry Muffins

 We don't have to eat a gluten free diet at our house, but I like to have yummy recipes ready for anyone who has an allergy. It took a couple tries, but we really like the outcome of this recipe and we hope you enjoy it also!  Gluten-free, Dairy-free, Refined sugar-free! Ingredients: 1 C oat flour 1 C almond flour 3 tsp baking powder 1/2 tsp salt 2 T flaxmeal 1/2 C chopped walnuts 3 very ripe bananas 1/4 C canola oil 1/4 C maple syrup 1 tsp vanilla 3/4 C blueberries (frozen or fresh) Instructions: Preheat oven to 350 degrees F. Use silicone baking cups, cup liners, or spray for the muffin tin. In a mixing bowl mash the ripe bananas with a fork until smooth. Add all wet ingredients to the mashed banana. In a separate bowl, combine all dry ingredients. Then pour in the wet ingredients and mix until combines. Fold in nuts and blueberries. Scoop the batter into the baking cups or sprayed muffin tin. Easy Banana Apple Bread

This easy recipe came about because of a little mishap by an eight-year-old! :) One of the tastiest and best mishaps we've had in our home. (Watch the YouTube video to hear the whole story!)  This scrumptious bread recipe can easily be make into muffins, loaves, or cake. Ingredients: 1/2 C canola oil 1 large ripe banana, mashed 1/2 tsp vanilla 1 1/2 C natural applesauce 1 C whole wheat flour 1 C unbleached flour 1/2 C cane juice crystals 1 tsp baking soda 1/2 tsp salt 1 tsp cinnamon Instructions: Preheat oven to 350 degrees. Spray three small loaf pans or muffins tins with nonstick cooking spray. Combine al wet ingredients in a medium mixing bowl. Mix together well. Combine all dry ingredients in a a large mixing bowl and stir. Pour wet ingredients into dry ingredients and stir until combined. Spoon into pans. Bake loaves for 30-40 minutes, covered only half the time. Bake muffins for 20-25 minutes or until lightly golden and a toothpick comes out clean.

Blueberry Muffins

Wow!! Homemade blueberry muffins! How much better can it get? We make these quite often and never tire of eating them. You can do other fruit variations as well. Peach, Orange cranberry, and the list goes on... Enjoy these delicious muffins! Ingredients: 1 C whole wheat flour 3/4 C unbleached flour 3/4 C quick oats 1 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1/2 C cane juice crystals 1 C blueberries, fresh or frozen (we like a heaping cup!) 1 C soymilk (add a splash more if you think the batter is too thick) 1/4 C oil 1/2 C applesauce 1 tsp vanilla Instructions: Preheat oven to 350.  Spray muffin tin.  Mix together dry ingredients in a mixing bowl.  Mix together wet ingredients in a separate bowl.  Combine and stir until well mixed.  Fold in blueberries.  Bake until golden brown and toothpick inserted comes out clean…about 20-22 minutes for regular size muffins.  Mini muffins are great also....bake these for 18-20 minutes.  *Ovens var...

Cornbread

Cornbread!  It's what you needs with a warm bowl of soup or chunky chili!  This will satisfy and fill you.  It truly is delicious! Ingredients: 1 C cornmeal 1 C flour 3/4 tsp salt 3 1/2 tsp baking powder 1/4 C cane sugar 1 C plain soymilk 1/4 C unsweetened applesauce 1/4 C canola oil Directions: Mix dry ingredients in a medium size bowl.  Add all wet ingredients and stir until mixed through.  Pour into an 8x8 pan that has been spraying with cooking spray.  Bake at 350 for 25 minutes. *Will also make 10 cornbread muffins

French Toast

I made french bread yesterday so what better thing to make (besides garlic bread!) than french toast!  This recipe is easy, healthy, and yummy! Ingredients: Blend together: 1 C soymilk (or other nondairy milk) 1/2 banana (riper is sweeter) 2 T flaxmeal 1/2 tsp vanilla slices of bread (any kind you like, but we really like french bread) Instructions: Dip each piece of bread into the batter, flipping to coat each side.  Put into hot frying pan and brown on both sides. Top with your favorite toppings!

Pita Bread

Pitas are just fun, and they make it easy for little hands to hold sandwiches better!  Bonus:  This recipe is so incredibly easy! Ingredients: 4 C whole wheat flour (or 2 cups whole wheat and 2 cups unbleached) 1 T dry yeast 1 1/4 C warm water 1/2 tsp salt Instructions: Preheat oven to 500°F. Sift together 2 cups of flour and the yeast. Add water and salt and mix well. Gradually add in the remaining flour just until the dough begins to clean the sides of the bowl. Once this happens, stop adding flour (so, you might not use all the flour the recipe calls for.). Knead the dough for about 4 or 5 minutes, or until dough is smooth and elastic. (While you're kneading, you can get creative and add in some herbs or spices, but only if you want to do that). Be careful not to over-knead the dough. Form dough into 10 balls. Granola Pear Muffins

I adapted this recipe from off the internet and made it deliciously vegan!  It truly was yummy!  See what you think!  :) Ingredients: 1 C unbleached flour 1 C whole wheat flour ½ C granola 2 tsp baking powder ½ tsp salt ¾ tsp cinnamon 2/3 C brown sugar or equivalent 1/3 C applesauce ½ C oil ½ soymilk 2 C diced pear For Granola Crisp Topping: ½ C granola ¼ C unbleached flour 1 T cinnamon/sugar mix 3 T chilled earth balance margarine Instructions: Preheat oven to 350.  In a large bowl, whisk together flours, baking powder, salt, cinnamon, and sugar.  In a separate bowl, whisk together applesauce, oil, and soymilk.  Make a well in the center of the flour mixture.  Add liquid to the well and mix until just combined.  Gently fold in granola and pears.  Make Granola Crisp topping:  Either mix all ingredients in bowl or add all to a food processo...

Raspberry Lemon Muffins

I hit upon a winner yesterday!  I've been wanting to try a raspberry lemon muffin recipe and I finally did!  The original recipe had yogurt and eggs in it and my applesauce and soymilk substituted extremely well!  Mmmm....  :) Ingredients: 1 C whole wheat flour 3/4 C unbleached flour 3/4 C quick oats 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1/2 C cane sugar 1/4 C canola oil 1/3 C applesauce 1 C soy milk 1 tsp vanilla 1 T lemon juice Zest of one lemon 1 1/4 crushed frozen raspberries Instructions: In a large bowl, combine all dry ingredients.  Whisk together and set aside. In a medium bowl, combine all wet ingredients, including lemon zest.  Pour the wet mixture into the dry mixture and fold until just combined.  Do not over mix.  Fold in the raspberries.  Divide the muffin batter evenly into sprayed mini muffin pans and bake for about 20 minutes or until a toothpick inserted into the ...
