Candied Pecans

Sweet and crunchy, these candied pecans are made with simple ingredients and take just a few minutes to throw together.  They are just as delicious as a topping on salads and oatmeal as they are straight from the jar. Whether you’re making them for a holiday treat, a homemade gift, or an everyday snack, this easy recipe turns humble pecans into something truly irresistible. They are perfect for the holiday season!
Ingredients:
2 tbsp butter 
3 cups pecan halves 
1/2 cup brown sugar 
1 tsp salt 
1/4 cup water

Instructions:
Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside. In a large skillet, melt the butter over medium heat. Add in the pecans and stir continuously for 3 minutes, to lightly toast the pecans. Add in the brown sugar, and stir for an additional 2 minutes to melt the sugar. Stir in the salt, and add the water. Cook, stir continuously, until the water is evaporated, 1-2 minutes.
Remove from the heat and spread evenly on the baking sheet.
Bake for 5-7 minutes, until fragrant and lightly crisp. Remove from oven and allow to cool completely on the baking sheet.

Notes: Store airtight at room temperature for up to 7 days

Potato Carrot Cheese

Everyone needs to try this recipe.  I could sit and dip chips in this cheese at every meal, I think.  I like that it has lots of fiber and nutrients.  It's a little cheaper than some recipes because the base is made from potatoes and carrots.  It is bursting with flavor! Ingredients: 2 C cooked potatoes 1 C cooked carrots 1/2 C nutritional yeast, scant 1/2 C water (use from cooked potatoes and carrots) 1/3 C light olive oil 1 Tbsp lemon juice 2 tsp salt 1/2 tsp chicken-style seasoning 1/4 tsp garlic powder 1/4 tsp onion powder 2 oz pimientos Instructions: Put all ingredients into a blender and blend until smooth and creamy.   Serve with chips, on broccoli, as macaroni and cheese, on lasagna.  This is so very yummy!

Vegan Key Lime Pie

This is one of our very favorite desserts and often gets requested for birthdays.  It's simple and so delicious. We even accidentally found out that it is great as frozen key lime pie as well! :) Ingredients: 12 oz firm tofu (water-packed or Mori-nu both work well!) 1 - 8 oz non-dairy cream cheese 1/2 C lime juice  3/4 C cane juice crystals 1 tsp vanilla extract 1 Tbsp honey 2 Tbsp cornstarch 1 graham cracker crust* Instructions: Blend all ingredients in the blender until very smooth. Pour into a saucepan and stir constantly over medium heat until it starts to bubble a little. Pour into a graham cracker crust and chill for at least four hours or overnight. *Use gluten-free crust to make this dessert gluten-free.

Tater Tot Casserole

Warm and comforting! You cannot go wrong with this meal. It's the vegan version of regular tater tot casserole with an added surprise of nutrition. Ingredients: 32 oz. frozen tater tots  2 cups frozen cauliflower 2 cups mushroom soup substitute* 1 cup vegan sour cream** 2 cups shredded vegan cheese Instructions: Mix all ingredients together in a large mixing bowl. Pour into a sprayed 9x13 baking dish. Bake at 375° for 45 minutes. *Note: Here is my  Dairy-Free Condensed Mushroom Soup  recipe. **Note: You can use my  vegan mayonnaise  recipe. To make it more sour cream-like, just add an extra tablespoon of lemon juice.
