It takes me right back to my childhood and all those comforting memories of home so when I was sick last week, I knew exactly what I needed—a warm bowl of this soup. Ingredients: 1 cup uncooked white rice 7 cups water 1½ teaspoons salt, or to taste 1 can (14.5–15 oz) diced tomatoes, undrained 1 cup sour cream (I use vegan) Directions: Bring the water, rice, and salt to a boil. Reduce heat, cover, and simmer about 15 minutes, until the rice is tender. Stir in the diced tomatoes and simmer another 5 minutes. Reduce the heat to very low. Stir a little hot soup into the sour cream first to temper it (in a separate bowl), then stir the sour cream mixture back into the pot.
