Lentil Stacks

Everyone needs to know about this meal.  It is one of our favorite family meals!  Recently this is the meal that we have when we invite people over as well and most people just really enjoy it.  One of the nice things about it is that it is gluten-free, soy-free, nut-free, sugar-free, and most other allergens free.  :)  It's pretty safe no matter who you serve....except someone who can't tolerate lentils.  Oh well...can't win 'em all!  It is so yummy!  All five of us think so!

Ingredients & Instructions:

Layer the following:

Brown rice
Lentils
          1 C lentils
          5 C water
          1 chopped onion
          2 bay leaves
          1/2 tsp oregano
          1 chopped carrot
          1 clove minced garlic
          1 15oz can tomato sauce
          2 tsp salt
          2 T chicken seasoning
Bring all lentil ingredients to a boil and simmer for about 45 mins or until lentils are soft. Stir occasionally. Keep lid partway off so that some liquid can boil off and it becomes thicker.

Lettuce
Tomato
Avocado
Yellow pepper
Olives

Toppings - these are what make the stack!!!
lemon juice - best from fresh lemon wedges
olive oil with minced fresh garlic in it

I never measure when it comes to preparing the garlic and olive oil.  I pour olive oil into a pint mason jar and just start mincing or pressing garlic into it.  If I poured in about a cup of oil, I'd probably use about 10 cloves of garlic.  We are not shy about garlic!  I try to do that at least an hour before we eat so that the garlic and oil can marinate.

This is an amazing meal!!  I hope you enjoy it too!

Potato Carrot Cheese

Everyone needs to try this recipe.  I could sit and dip chips in this cheese at every meal, I think.  I like that it has lots of fiber and nutrients.  It's a little cheaper than some recipes because the base is made from potatoes and carrots.  It is bursting with flavor! Ingredients: 2 C cooked potatoes 1 C cooked carrots 1/2 C nutritional yeast, scant 1/2 C water (use from cooked potatoes and carrots) 1/3 C light olive oil 1 Tbsp lemon juice 2 tsp salt 1/2 tsp chicken-style seasoning 1/4 tsp garlic powder 1/4 tsp onion powder 2 oz pimientos Instructions: Put all ingredients into a blender and blend until smooth and creamy.   Serve with chips, on broccoli, as macaroni and cheese, on lasagna.  This is so very yummy!

Pour into a sprayed 9x13 baking dish. Bake at 375° for 45 minutes. *Note: Here is my  Dairy-Free Condensed Mushroom Soup  recipe. **Note: You can use my  vegan mayonnaise  recipe. To make it more sour cream-like, just add an extra tablespoon of lemon juice.
