Japanese Christmas Cake with Strawberries and Whipped Topping

Our Christmas cake gone AWRY!  I guess I didn't know that whopped topping turns into a runny gluelike substance after it's been in the freezer!  We were going to take this cake to the Pathfinder dessert auction fundraiser Saturday night, however, I just couldn't do it with the whipped topping running all over the place!  So, alas, we had to keep it at home and eat it ourselves.  And it was amazing!  It tasted like I was eating strawberry shortcake.  Runny whipped topping tastes the same as whipped topping...but the texture is different!  :)


This a very easy cake to make. You need three ingredients:

Ingredients:

A vanilla cake recipe
1 container of whipped topping (don't put it in the freezer!!)
2 lbs fresh strawberries

Here is the vegan vanilla cake recipe I used.

1 C non-dairy milk + 1 tsp apple cider vinegar
1/2 C vegan butter, softened
scant 1 cup cane sugar
1 tsp vanilla extract
1 1/2 C unbleached all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt 

Instructions:

Preheat the oven to 325 degrees and line a standard square or round cake pan.  Or spread it really well with margarine.
In a liquid measuring cup, measure out non-dairy milk and add vinegar or lemon juice.  Let set to curdle/activate.
Add softened butter to a large mixing bowl and cream with a mixer.  Then add sugar and vanilla and beat until combined and fluffy -- about 2 minutes.
Add dry ingredients to a sifter in this order:  1 C flour, baking soda, baking powder, salt, and then remaining flour.
Sift over butter/sugar mixture alternating with the almond milk mixture.  Blend until well incorporated and no large lumps remain.  
Divide evenly between the two cake pans.  Bake on the center rack at 325 for 30-40 minutes or until a toothpick inserted into the center comes out clean.  Let cool completely on a wire rack.  Turn over and take the cake out of the pan.

Assembly:

Put down the first cake layer.  Spread with whipped topping, strawberries, and more whipped topping.  Put the second cake layer on top of that.  Spread whipped topping over the entire cake.  Decorate the top of the cake with strawberry halves.  Can put some around the bottom edge of the cake as well.

Potato Carrot Cheese

Everyone needs to try this recipe.  I could sit and dip chips in this cheese at every meal, I think.  I like that it has lots of fiber and nutrients.  It's a little cheaper than some recipes because the base is made from potatoes and carrots.  It is bursting with flavor! Vegan Key Lime Pie

This is one of our very favorite desserts and often gets requested for birthdays.  It's simple and so delicious. We even accidentally found out that it is great as frozen key lime pie as well! :) Ingredients: 12 oz firm tofu (water-packed or Mori-nu both work well!) 1 - 8 oz non-dairy cream cheese 1/2 C lime juice  3/4 C cane juice crystals 1 tsp vanilla extract 1 Tbsp honey 2 Tbsp cornstarch 1 graham cracker crust* Instructions: Blend all ingredients in the blender until very smooth. Pour into a saucepan and stir constantly over medium heat until it starts to bubble a little. Pour into a graham cracker crust and chill for at least four hours or overnight. *Use gluten-free crust to make this dessert gluten-free.

Creamy Basil Dressing

This time of year I always have lots and lots of basil growing in the garden. I always make lots of pesto to freeze for the winter, and this year I started looking for a new recipe that I could use my basil in.  This recipe is so delightful! It's fresh and tasty. We've used it on burritos and salad so far.  It really makes my taste buds happy! Ingredients: 3/4 C water 1/3 C raw cashews 1/3 C olive oil 3 Tbsp nutritional yeast flakes 2 Tbsp lemon juice 8-10 fresh basil leaves 1 clove garlic 1/2 tsp onion powder 1/2 tsp salt Instructions: Place all ingredients into a high-speed blender, and blend until there are no gritty pieces of cashews, and everything is smooth and creamy.  Serve chilled.
