Pita Bread

Pitas are just fun, and they make it easy for little hands to hold sandwiches better!  Bonus:  This recipe is so incredibly easy!


Ingredients:

4 C whole wheat flour (or 2 cups whole wheat and 2 cups unbleached)
1 T dry yeast
1 1/4 C warm water
1/2 tsp salt

Instructions:

  1. Preheat oven to 500°F.
  1. Sift together 2 cups of flour and the yeast.
  1. Add water and salt and mix well.
  1. Gradually add in the remaining flour just until the dough begins to clean the sides of the bowl. Once this happens, stop adding flour (so, you might not use all the flour the recipe calls for.).
  1. Knead the dough for about 4 or 5 minutes, or until dough is smooth and elastic. (While you're kneading, you can get creative and add in some herbs or spices, but only if you want to do that). Be careful not to over-knead the dough.
  1. Form dough into 10 balls.
  1. On a floured surface, roll each ball into a 5-6 inch circle, about 1/4 inch thick. (Be sure to sprinkle a little flour on both sides to prevent sticking).
  1. Place on a non-stick baking sheet and allow to rise 30 minutes, or until slightly raised.
  1. Just before you place the pan in the oven, flip each pita over on its other side.
  1. Bake on the bottom rack of the oven for 5 minutes. (The instant hot heat will help them puff up).
  1. When the pitas come out of the oven they will be hard, but they will soften as they cool.
  1. Store them, while they're still warm, in plastic baggies or an airtight container.
  1. Cut the pitas in half crosswise and stuff with your favorite fillings (beans and rice, taco fixings, thick stews, curries - anything goes).
  1. Pitas can be reheated in a 350°F oven or in the microwave.

Everyone needs to try this recipe.  I could sit and dip chips in this cheese at every meal, I think.  I like that it has lots of fiber and nutrients.  It's a little cheaper than some recipes because the base is made from potatoes and carrots.  It is bursting with flavor! Tofu Dinner Roast

This is a wonderful loaf! It's so simple to throw together, and it tastes so good! You can even make it ahead of time and put in the fridge until you want to bake it. Ingredients: 2 - 16oz firm water packed tofu 1 - 6oz bag puffed rice cereal 1 chopped onion 1/3 C melted earth balance 1/3 C braggs liquid amigos 1 Tbsp beef like seasoning Optional - add 1/3 C chopped walnuts Instructions: Crumble tofu into very small, almost mashed, pieces. Add all other ingredients and mix well. Press firmly into a 9 x 13 pan. Bake on 350, covered, for 45 minutes. Uncover and bake for 15 to 20 more minutes. E njoy!!

Vegan Key Lime Pie

This is one of our very favorite desserts and often gets requested for birthdays.  It's simple and so delicious. We even accidentally found out that it is great as frozen key lime pie as well! :) Ingredients: 12 oz firm tofu (water-packed or Mori-nu both work well!) 1 - 8 oz non-dairy cream cheese 1/2 C lime juice  3/4 C cane juice crystals 1 tsp vanilla extract 1 Tbsp honey 2 Tbsp cornstarch 1 graham cracker crust* Instructions: Blend all ingredients in the blender until very smooth. Pour into a saucepan and stir constantly over medium heat until it starts to bubble a little. Pour into a graham cracker crust and chill for at least four hours or overnight. *Use gluten-free crust to make this dessert gluten-free.
